Baby Jesus’ birthday is a mere two days away which means my annual Christmas time diet of candy, candy and more candy has arrived. One of my favorite fool proof snacks to make this time of year is peppermint bark and today I am sharing my not so top secret recipe. It is literally SO EASY and the best gift to give to mass amounts of people.
- 3 bags of white chocolate chips
- 3 bags of semi sweet chocolate chips
- 2 dozen candy canes
(Makes three baking sheets worth of bark/20 small gift bags full)
First things first, line your baking sheet with parchment paper. This not only makes it easier to spread the chocolate but it also makes clean up a whole lot faster. Next, dump one full bag of semi sweet chocolate chips in a microwave safe bowl and start melting it in 15 second increments. Melting it all in one go risks burning the chocolate and absolutely no one wants to eat that. Melt 15 seconds, stir, melt 15 seconds, stir again, over and over again until it’s all melted down. Then take either a regular spatula or an icing spatula (I used the latter since they are smaller and easier to control) and spread out your melted chocolate in an even layer on your baking sheet. Stick that baby in the fridge and let it cool all the way down.
While your first layer is cooling we are going to get out some of our pent up aggression and anger. Unwrap a dozen of your candy canes and break them into three or four pieces each. Put them in a gallon sized plastic bag, take out as much air as possible and roll it up. Take the rolled up bag, put it into another gallon plastic bag and again, take out as much air as you possibly can. Now comes the fun part, we are going to beat the crap out of these candy canes. I double bag them because it tends to make a mess and the sharper pieces without fail will punch holes in the plastic bag. I usually like to put my plastic bag inside of a kitchen towel and hammer on top of a cutting board to limit the sound but you do whatever rocks your world. Hammer away until you get a good ratio of small pieces to candy cane powder and set aside.
With your candy canes ready to go, dump the white chocolate chips in another microwave safe bowl and melt it down just like we did with the semi sweet chips. Take your cold semi sweet layer out of the fridge and smooth the melted white chocolate layer right on top of it. Before the white chocolate can cool down, start scattering the peppermint chunks and powder on top. I like to lightly press the candy canes into the chocolate with my spatula to make sure it stays locked into place as it cools. Put it back in the fridge for the final cool down.
Once your second layer of chocolate/candy canes has solidified, take it out of the fridge and break it into chunks! I like to take a butter knife and poke around the chocolate to make a bunch of cracks that way I can better control how big/small the pieces turn out. Bag it up and you have the easiest edible holiday gift ever. Enjoy!
