Keeping on trend with our #TGSEats quick recipes that are perfect for summer and can be made with few ingredients, today we will be enjoying my own spin on a basic Chia Pudding. Similar to our Overnight Oats recipe, Chia Pudding is a quick, healthy breakfast idea that has a short prep time and sets overnight. Less work is the best work.
My recipe was first found on Chocolate Covered Katie, where I basically pulled the measurements and modified the toppings, sweeteners, and consistency to my own personal preference.
- Chia Seeds (1 Tbsp)
- Flax Seed (1 Tsp)
- Sweetened Coconut Milk (1/2-3/4 cup, depending on your preference)
- Honey (1 Tsp)
- Toppings of choice-(for this recipe, we will be using)
- Fresh Strawberries
*Outside of the granola, I get all my ingredients from Trader Joe’s. They have the perfect size packages and their flax seed has dried blueberry giving this a little extra kick of sweetness and color.
Let’s get started!
Measure your coconut milk out. If you want a thicker pudding, use the smaller measurement, and if you prefer it a bit looser like me, use the larger. Mix the coconut milk, chia seeds, and flax seed until evenly dispersed. Drizzle with honey, and mix one more time.
Note that the portion of this is less than one cup. You can use whatever bowl/jar you have handy/will look the best on your Instagram account.
Once mixed, cover with saran wrap or foil and refrigerate overnight. When you check on it in the morning, the consistency should be thicker than liquid, but not as firm as yogurt. Chop up 3-4 strawberries and sprinkle granola on top (My favorite granola to use is KIND toasted honey and coconut). That’s it!
